Preparation:

Preparation for Chocolate Mousse:

1. In a mixing bowl, whisk melted chocolate with egg yolks then add 1/3 of single cream. When it starts to thicken, sprinkling with half of icing sugar and whipped cream.

2. Beat egg whites with a pinch of salt until stiff and add into chocolate mixture.

3. Spoon the mousse into glasses and chill in the fridge.

Preparation for Pineapple Mousse:

1. Whip the remaining of single cream and icing sugar until light and fluffy. Then gently add pineapple puree and set aside.

2. Beat egg whites with a pinch of salt until stiff and add into pineapple mixture.

3. Spoon the pineapple mousse on top of the chocolate mousse. Return the glasses to the fridge and shill for at least 2 hours.

4. Decorate with Pineapple crushed and slice of lime before serve.
